Coconut Balls Recipe

Ingredients:

  • Unsweetened shredded coconut: 2 cups
  • Condensed milk: 1 can (about 397g or 14 oz)
  • Vanilla extract: 1 teaspoon
  • Salt: a pinch
  • Optional: chocolate for coating (about 200g or 7 oz)

Equipment:

  • Mixing bowl
  • Baking sheet
  • Parchment paper (optional)
  • Refrigerate
  • Double boiler or microwave-safe bowl (if coating with chocolate)

Instructions:

  1. Mix the Ingredients:

    • In a mixing bowl, combine the shredded coconut, condensed milk, vanilla extract, and a pinch of salt. Mix well until all the ingredients are combined.
  2. Chill the Mixture:

    • Cover the bowl with plastic wrap and refrigerate the mixture for about 30 minutes to make it easier to shape.
  3. Shape the Coconut Balls:

    • Once chilled, take small portions of the mixture and roll them into balls (about 1 inch in diameter). Place the balls on a baking sheet lined with parchment paper.
  4. Optional Chocolate Coating:

    • If you’d like to coat the coconut balls in chocolate, melt the chocolate using a double boiler or in the microwave (heat in 30-second intervals, stirring in between until fully melted).
    • Dip each coconut ball into the melted chocolate, allowing any excess to drip off, then place it back on the parchment-lined baking sheet.
  5. Chill Again:

    • Refrigerate the coconut balls for about 30 minutes, or until the chocolate is set.
  6. Serve:

    • Enjoy your coconut balls chilled! They can be stored in an airtight container in the refrigerator for up to a week.

Tips:

  • You can roll the coconut balls in extra shredded coconut for a more textured finish.
  • For a different flavor, try adding almond or coconut extract instead of vanilla.
  • You can customize them by adding chopped nuts or dried fruits to the mixture.
